You can steam cauliflower with potatoes and smash them, add a wee bit of butter if you like. Don't worry about the tomatoes, lots of kids go through a stage when they don't like them. Make smoothies with his favorite flavor of yougurt and a bannana. BTW, I'm not an expert on the veggie thing, but one thing I found is that if you keep offering it, eventually, they break down. I'm sure you're doing that.
